I want to make my peach & Darjeeling ice cream again, but the last batch coated the roof of my mouth. Can we fix that without losing the tea?
Your cook log says exactly that — “coating the roof of the mouth” — so let’s fix the base, not the flavours. The coating is a fat problem: your v3 base is 946 ml of 36% cream plus 11 yolks, a very heavy anglaise. Rebuild it on a buttermilk custard: the fat drops sharply, so the coating goes — and buttermilk’s lactic acidity sharpens both the peach and the Darjeeling rather than muddying them.
Won’t less fat make it icy?
